Ethiopia is literally created for growing coffee: there are ideal weather conditions, fertile soil, suitable climate. Most of the coffee grows in natural conditions: among other plants, in the shade of trees, without the use of fertilizers and chemicals.
Good coffee from Ethiopia is never very roasted. The delicate aroma of Arabica and its rich, multi-level bouquet of taste simply does not tolerate strong heat treatment. Properly fried grains will always have a light caramel shade.
